There is perpetual snow in the Sierra Nevada since it is the highest point of the Iberian Peninsula (Mulhacen, 3478 metres). However, the Alpujarra of Almeria, being located on the eastern slope of Sierra Nevada, has a climate more influenced by the Mediterranean Sea, which provides a certain stability against the extreme temperatures that are experienced in the rest of the Sierra Nevada. The Alpujarra of Granada is colder than the Alpujarra of Almeria.

The climate in the Alpujarra of Almeria is essentially cold and dry, with a low relative humidity which provides ideal conditions for the curing of hams. It is an area of abundant water due to the snowmelt of the Sierra Nevada, making it an ideal place for sustainable and ecological cultivation.
